1 package white cake mix, 1 1/3 c. water, 3 egg whites, 2 T. vegetable oil or melted butter, 1/2 tsp. peppermint extract, 3-4 drops red food coloring, 1 container vanilla frosting, 1/2 c. crushed peppermint candies

Directions:
Directions:
Preheat onion to 350º. Line muffin pan with pink or white paper baking cups.

Beat cake mix, water. egg whites, oil, peppermint extract and food coloring with an electric mixer on low speed for 30 seconds. Beat at medium speed for 2 minutes.

Spoon batter into prepared muffin cups filling 3/4 full. Bake 20-22 minutes, until toothpick comes out clean. Cool completely to room tempreature before frosting. Spread frosting over cupcakes and sprinkle with crushed candies. Store at room tempreature for up to 24 hours, or cover and refrigerate for up to 3 days before serving.
