Vegetable oil
8 corn tortillas or more, thinly sliced
1 small onion, finely chopped
2 lg. fresh garlic cloves, minced
1 Tbsp. chili powder
2 tsp. cumin
½ tsp. dried oregano
1 bay leaf
6 c. chicken stock
1 8oz. can tomato sauce
1 tsp. sugar
¼ tsp. pepper
2 large chicken breasts
1 ½ c. corn

Topping: sour cream, cilantro, red onion, avocado, jack cheese

Directions:
Fry tortilla strips in hot oil until crisp. Drain, transfer 1 Tbsp. oil into large pot. Add onion and sauté over medium heat until tender, about 5 minutes. Add garlic, chili powder, cumin, oregano and bay leaf. Saute 1 min. Add broth, tomato sauce, sugar and pepper and boil. Add chicken, cover pot and simmer until chicken is just cooked through – 15 minutes. Transfer chicken to plate, cool and chop. Add corn and simmer until corn is tender- 5 minutes. Garnish with tortilla strips and desired toppings.
