2 large heads of broccoli, broken into florets
1/3 c flour
3 tsp butter
2 cans of chicken broth
1 small onion, chopped
¾ c water
1 clove minced garlic
Salt, pepper, thyme and oregano
1 c plain low fat yogurt
1 cube cheddar cheese

Directions:
Directions:
Steam broccoli and set aside. Sauté butter, onion and garlic until tender. I set aside some florets of broccoli broken into even smaller pieces to give the soup some chunkiness. Food process remainder of broccoli, onion/garlic mixture and set aside. In soup pot, combine yogurt and flour and whisk. Add broth and water plus seasonings to taste. Thicken for 20 minutes. Then add the broccoli and the cheese. You can use any kind of cheese you like from mild to sharp.
