1-3 lb. can Ricotta, drained through cheesecloth
1/2c. sifted flour
Graham cracker crumbs
2 c. sugar
8 egg yolks
Grated rind of 1 lemon
1 tsp. vanilla
1/2c. cream, whipped
8 egg whites

Directions:
Directions:
1. Beat ricotta until smooth, gradually adding 1 1/2 c. sugar and egg yolks, beating after each addition. 2. Beat in flour, lemon rind and vanilla.
3. Beat egg whites into ricotta mixture and turn into a 12'' spring form pan which has been well buttered and sprinkled with graham cracker crumbs.
4. Bake in a preheated 425º F. oven for the first 10 minutes; lower temperature to moderate 350º F and bake for one hour.
5. Turn off heat and allow to cool in oven with door closed.
