1 1/2 lbs ground beef (or 1/2 beef & 1/2 pork)
salt & pepper
1/2 cup italian bread crumbs
1 egg
2 cloves of garlic
1/4 small white onion
3 tbsp pine nuts (optional)
3 tbsp parmigiano, Romano or parmesan cheese
2 tbsp basil or flat leaf parsley
1 cup arrugula or baby spinach
6 slices of prosciutto
6 slices deli provolone
Extra virgin olive oil

Preheat Oven to 400 º F
Mix meat,salt, pepper, breadcrumbs, egg, garlic, onion, pine nuts, parmigiano and basil together (like you would meatloaf). Line a cookie sheet with wax papper. Put meat on wax papper and cover with another sheet of wax papper, place another cookie sheet on top and flatten meat out. Meat mixture should be about 1/2 in thick 12 in long and 6-8 in wide. Take wax papper off top and cover meat with arrugula, prosciutto & provolone. Roll the meat to form a log. I use the bottom shhet of wax papper to help me roll the meat. drizzle meat with olive oil and roast for 20-30 minutes. Cit into 1 in slices.
