Enchiladas:
1 stick butter
1/2 c. flour
1 small can tomato sauce
1 tbsp. garlic salt
1/2 c. chili powder (or less)
Enough water to make gravy consistent
Salt to taste
2 dozen corn tortillas

Filling:
1 lb. grated cheese (longhorn)
1 chopped onion
1 small can chopped olives
Shredded beef or chicken

Directions:
Directions:
1. Make roux with butter and flour. Add tomato sauce, oregano, garlic, salt, chili powder, water and salt.
2. Mix filling ingredients. Dip tortillas in hot water to soften. Place 2 tbsp. filling and 1 tbsp. sauce in tortilla and roll. Cover with additional sauce and cheese.
3. Cook 15 - 20 minutes at 350º F.
