6 T margarine
6 T flour
2 T curry powder
1 large yellow onion
1 1//2 tsp. fresh ginger
2 tsp. sugar
13 oz. low fat evaporated milk
1 tsp. minced garlic
1 pint canned coconut milk
1 lb. shrimp

Directions:
Directions:
Brown onion, ginger and garlic in butter. Add sugar, flour and curry powder. Add milk and shrimp. Do not boil. Serve over rice. Add any or all of these condiments: chopped hard cooked egg, chopped green onions, chopped banana, raisins, chopped peanuts, and shredded coconut. Bon apatite!
