2-9" pie shells
8 slices bacon, fried and crumbled
1/4 c. onion, diced
1 c. swiss cheese, grated (or 1/2 cup swiss cheese and 1/2 cup cheddar cheese)
6 eggs, lightly beaten
2 c. half and half
pepper, nutmeg to taste
1 9" pie crust

Directions:
Directions:
Heat oven to 400 degrees. Using fork, prick bottom and sides of pie shell. Bake at 400 degrees for 10 minutes.
In large bowl, using wire whip or fork, blend half and half and eggs together. Stir in cheese, onion, bacon and pepper. Pour into prebaked pie shells. Lightly sprinkle top with nutmeg. Reduce oven temperature to 375 degrees. Bake for 35-40 minutes or until knife inserted in center comes out clean. Cool 5 minutes before cutting into wedges to serve. 2 quiches; 12 servings.
