* Parchmant paper {found by the foil & saran wrap}
* 1 1/2 pounds chicken tenders
* 1/4 cup each olive oil & slightly sweet white wine
* 1 packet Good Seasons Italian dressing mix
* 2 minced garlic cloves
* 2 sliced shallots
* 2 medium carrots/peeled/cut into 2" matchsticks
* 1 large leek/washed/cut into 2" matchsticks
* 2 stalks celery/washed/cut into 2" matchsticks
* 1/2 red & 1/2 yellow pepper/cleaned/cut into
2" matchsticks

*Combine the olive oil , wine & the dressing packet in a large ziploc bag,reserving 1/4 cup,add the chicken,squish it around & merinate about 1/2 hour.*In the meantime,Get the vegies ready & merinate {including the shallots & garlic} in the reserved merinate in a separate bag,for 15 minutes.*Heat the oven to 375.*Cut eight 12x 12 pieces of parchment.*Lay 1 down on your work surface,put 1/4 of the chicken & 1/4 of the vegies in the center.*Lightly brush another piece of the parchment evenly with some melted butter & place {butter side towards chicken & vegies} on top.*Roll the edges to seal.*Repeat.*Place on 2 large baking sheets & bake about 20 minutes 'til paper is browned & puffed.*Transfer each packet to a shallow bowl & cut open at the table.
