¼ c. butter
1 c. chopped celery
1 c. chopped onion
1 clove minced garlic
4 c. beef broth
3 c. cubed potatoes
1 can corn (do not drain)
2 c. sliced carrots
½ tsp. celery seed
½ tsp. thyme
½ tsp. salt
2 tbsp. corn starch
¼ c. water

Directions:
Directions:
In a stock pot or dutch oven, melt the butter. Add celery, onion, and garlic, and cook for 3-4 minutes. Add broth, potatoes, corn, carrots, celery seed, thyme, and salt. Bring to boil over medium heat. Reduce heat, cover and simmer for 30 minutes, or until vegetables are tender. Separately, stir corn starch into the water until smooth. Add to pot, and boil for 1 minute.
