4 qts. long banana peppers, red, green or yellow
¼ c. sugar
2 cloves garlic
2 tbsp. prepared horseradish
10 c. white vinegar
2 c. water

WEAR RUBBER GLOVES TO PREVENT BURNING HANDS!!!! Clean seeds out of peppers and cut ends off. Rinse well with water. These peppers can be packed either whole or sliced: For Whole, cut 2 small slits vertically in each pepper. For Sliced, cut peppers horizontally so they look like rings. Combine ingredients: simmer for 15 minutes, remove garlic. Pack peppers into hot canning jars, leaving ¼ inch head space. Add a scant ½ teaspoon alum (type of spice) for crispness. Pour BOILING hot pickling liquid over peppers. Adjust lids and caps which also have been in boiling water. The jars should seal and as long as seal is not broken they can stay on shelf for a long time. Yield: about 8 pints.
