2 eggs, separated
3 tsp. caster sugar
1/4 c. plain flour
1 tbsp. corn flour
2 c. cooking apples
1/4 c. butter or oil
Icing sugar

1. Beat the egg yolks with sugar and cream.
2. Whisk the egg whites until very stiff and fold in.
3. Sift the flours and mix in lightly.
4. Peel, core, and cut the apples into rings.
5. Spike the apple rings and turn in batter.
6. Melt the butter or heat the oil in the frying pan, and drop the apple rings into it.
7. Fry on both sides until golden and nicely puffed.
8. Pile on plate, sprinkle icing sugar over them through a fine sieve and serve immediately.
