Ingredients: CRUST: * 10 whole graham crackers,crushed * 1 1/4 cups pecans * 1/4 cup sugar * 3/4 stick of melted/unsalted butter
FILLING: * 1 1/2 pounds cream cheese * 3/4 cup sugar * 3 eggs * 1/3 cup Baileys * 1 tsp. pure vanilla extract * 3 ounces imported white chocolate {Lindt} broken into pieces TOPPING: * 1 1/2 cups sour cream * 1/4 cup confectioners sugar * 1 1/2 ounces imported white chocolate,grated * 24 pecan halves

Directions:*Heat oven to 325. *Lightly spray 9" springform pan. *Finely grind graham pieces,pecans & sugar in a food processor. {pounding them with a rolling pin in a large ziploc bag works too} *Add the butter. *Press it into the pan evenly across the bottom & about 1 1/2 " up the side & refrigerate. *With your stand mixer:beat together the cream cheese & sugar 'til smooth. *Whisk the eggs,Bailey's & vanilla in a separate bowl, then add to cream cheese mixture. *Finely chop the 3 ounces of white chocolate in food processor or with a knife-add to mixture. *Transfer into crust lined pan & bake about 50 minutes,until center is just set. Cool completely. *Mix sour cream & sugar in small bowl. Spread onto cooled cake. *Sprinkle with grated white chocolate & place pecan halves around the edge. **Keep covered & in the fridge. |
