8 oz. semisweet chocolate
2/3 c. heavy cream
3 T. Amaretto or 1 & 1/2 T. Brandy
2 T butter, softened
1/4 c. unsweetened cocoa

Directions:
Break chocolate into small pieces and melt in top of double boiler over simmering water until smooth. In small enameled sauce pan, bring cream to boil. When cream begins to foam, add it immediately to the chocolate, whisking vigorously until the mixture is smooth. Whisk in Amaretto or Brandy and transfer mix to bowl. Chill mix covered for at least 4 hours or overnight. Beat in butter bit by bit until mix is combined. Chill again for at least 1 hour. Form mix into 1" balls and roll them in shallow dish filled with cocoa. If mixture becomes too soft to handle, chill again. If covered and chilled, truffles keep up to 1 month. Serve chilled or at room temperature. Delicious!
