My Mother's Swedish Coffee Bread Recipe

Ingredients: 6 cups flour 1 cup sugar 4 tspn. ground cardamom 11/2 tsp. salt 1/2 cup margarine 1/4 cup butter 2 cups lukewarm milk 2 beaten eggs 2 pkgs yeast pearl sugar

Directions:Dissolve yeast in 1/3 cup warm water plus 1 tsp. sugar and set aside. Sift dry ingredients. Then cut in margarine and butter. Add beaten eggs to milk and then add to flour mixture along with dissolved yeast. Mix well. Cover with towel and set aside to rise to double its bulk. Cut down with knife on floured board. Knead well (15 min.) Add about 1 more cup of flour as needed----but keep dough soft. Mold into coffee braids or buns. Let rise again, covered with towel in a warm place, to double or triple its bulk. Before putting in oven, brush with beaten egg mixed with a little milk. Sprinkle with pearl sugar and bake at 375 degrees about 25 minutes. Watch carefully. Makes 2 large braids and 2 dozen rolls. Pearl sugar can be bought at IKEA or at the Swedish store in Norwalk, CT. |

Notes: I remember well my mother making this coffee bread. The sweet smell of the cardamom and the baking of the breads - coffee cakes - especially in the winter and at Christmastime, filled our home for hours. The same smells today bring back vivid memories of my childhood.
