1 Baked Quiche shell;
1 c cooked and well-drained spinach;
2 eggs, beaten;
1/2 c evaporated milk or light cream;
1/2 tsp nutmeg;
1/4 tsp salt;
Pinch of pepper;
1-1/2 T grated parmesan cheese.

Directions:
Directions:
Combine spinach, eggs, evaporated milk or cream , nutmeg, salt and pepper.Pour into baked quiche shell. Sprinkle with parmesan cheese. Bake at 350 for 30-45 minutes or until knife inserted into center comes out clean
