2 cup flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/3 cup butter
1/3 cup shortening
4-5 tablespoon cold water

Filling:
1/2 cup sugar
1/2 cup packed brown sugar
1/4 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
6 cups peeled, sliced tart cooking apples
1 tablespoon melted butter
1 teaspoon sugar
1/2 cup whipping cream (optional)

Oven to 400º
Prepare filling first.
In large bowl, combine sugar, brown sugar, cinnamon,
nutmeg, and flour. Mix thoroughly. Add apples and
toss to coat.
Prepare crust.
In medium bowl, mix flour, salt and spices. Add butter
and shortening; cut with pastry blender until coarse
crumbs form. Add 4 tablespoons cold water and mix with fork.
Add more if needed. Divide dough in half. Without
working too much, take half of the dough and roll out on
floured surface. Place in 9 inch pie pan. Add apples.
Prepare top crust and place over apples. Press
together and flute edges. Cut a few large slits in top of
pie so steam can escape. Brush pie with melted butter
and sprinkle with sugar. Line edges with aluminum foil.
Bake for 35 minutes. Remove foil and
bake an additional 10-20 minutes until juices are bubbly.
If whipping cream is desired, pour into pie slits 5
minutes before pie is done.

This is a really delicious apple pie... the spices in the crust are fantastic and adding the whipping cream is a delicious and unexpected surprise. No need for ice cream on this one!
