3 lbs. ground beef or chuck
1 medium onion finely chopped
1 small bell pepper finely chopped
2 small eggs
1 pack of club crackers
1/2 cup of Kraft honey BBQ sauce
1/4 cup of tomato catsup
1/4 tsp of black pepper
1/4 tsp of garlic powder
1/2 tsp of seasoning salt

Pre-heat oven to 350F.
Mix all ingredients in bowl with hands and form into a beautiful loaf. Place in loaf pan (use baking spray on pan before placing mean in it. Bake in oven about 1-1/2 hrs. or until done.
Take additional BBQ sauce and catsup (about 1/4 cup) and mix with 1/4 tsp of lemon juice, 3 tbsp of white sugar and 1 tsp of brown sugar and 2-3 tsp of water. This is your topping mixture. Spread over the top of meatloaf and place back in oven for 5-10 minutes. Repeat until topping is all used up. You may spread over the side of meatloaf as well. If you're a cheese lover may top with shredded cheddar cheese.
