5 egg whites
1 1/3 cup buttermilk
1/3 cup unsweetened applesauce
1 chocolate cake mix
FROSTING
3 cups confectioner's sugar
1/2 cup cocoa
6 tablespoons light butter, at room temperature
1/3 cup fat-free milk
1 teaspoon vanilla extract

Preheat Oven to 350º F.
Coat a 13 x 9 inch pan with cooking spray
Use an electric mixer to beat egg whites for 1 minute or until foamy
Mix in buttermilk and applesauce.
Add the cake mix and beat for 2 minutes or until smooth.
Pour into prepared pan and bake for 30-35 minutes or until cake begins to pull away from the sides of the pan
Cool completely before frosting.
FROSTING
In a small bowl combine sugar and cocoa until blended and "lump-free".
In a separate bowl with an electric mixer, beat the butter until fluffy.
Add vanilla.
Alternately add the cocoa mixture and milk and beat until completely smooth. Scrape sides of bowl often.
Frosting will be thin, it firms up as it sets. Refrigerate until ready to serve.
Cake freezes well. |
