2 large Granny Smith apples
2 tbsp. lime juice
3 1/2 c. cooked, cubed chicken
1 1/3 c. cooked rice
1 c. mayonnaise
1/2 c. slivered almonds, toasted
1 tbsp. finely chopped onion
1 tbsp. curry powder
1 tsp. salt
1/8 tsp. pepper

Directions:
Directions:
Core and dice the apples and combine with the lime juice. Stir in the chicken, rice, and almonds. Mix together in a separate bowl the mayonnaise, onion, curry powder, salt and pepper and stir it into the chicken mixture. Chill. Serve over salad greens with slices of lime and chutney on the side if desired.
Note: You can adjust the recipe to suit your tastes. I skip the almonds most of the time. I usually replace the rice with whole wheat couscous (pour 1 1/2 cups of boiling water over 1 cup of couscous and 1/4 tsp. salt. Cover with plastic wrap and let sit for 5 minutes. Fluff with fork.) Adjust the lime juice and curry powder to taste. You can also replace half the mayonnaise with plain yogurt to reduce the calories.
