2 c. pumpkin (cooked)
2 heaping tbsp. flour
1 c. sugar
1/2 tsp. salt
2 eggs (separated)
2 c. milk
1 c. cream
1 tsp. vanilla
1/2 tsp. lemon flavoring

Directions:
Directions:
Mash pumpkin finely, mix in flour, egg yolks, salt, and sugar, mixing well. Add milk, cream, and flavoring. Beat whites of eggs until stiff and stir into filling, leaving a froth swimming on top of the creamed mixture. Pour into unbaked crust, sprinkle with nutmeg, and bake at 450º for 20 minutes, then reduce heat to 375 º and bake 20 minutes longer.
Yields: 2 pies
