2 tsp. olive oil
1 medium spanish onion, chopped
3 cloves pressed garlic
2 bell peppers, diced
4 c. corn kernals (about 6 corn)
8 c. vegetable stock
1/4 c. chopped cilantro
cayenne pepper

Directions:
Directions:
Heat stockpot over medium heat. Add oil. Add onion, garlic and
cayenne to hot oil. Cook until onion is soft, about 10 minutes.
Raise the heat to high and add corn and stock. Bring to a boil,
and then let simmer 25 minutes. With an immerson blender
puree soup, until chunky. Serve in individual bowls with
handfuls of peppers in the center and cilantro as garnish.
