2 peeled cucumbers
3 diced beefsteak tomatoes
4 cloves of garlic, pressed
1 red onion, chopped
1 red bell pepper, diced
1 yellow pepper, diced
2 T. olive oil
1/4 c. red wine vinegar
1/4 c. balsamic vinegar
2-3 c. low salt tomato juice
1/4 c. chopped cilantro
1/2 tsp. cayenne pepper
salt and pepper to taste

Directions:
Directions:
Combine cucumbers, tomatoes, peppers, onion, garlic, herbs
and cayenne pepper in a large bowl. Place half the mixture in a
food processor and pulse into a thick liquid. Return mixture into
original bowl, and mix together. Cover and refrigerate at least
four hours. Add fresh herbs and additional cayenne pepper
before serving.
