2-3 small zucchini ( about 1 1/2 inch diameter)
1 egg
1/2 c. flour
14 saltine crackers, crushed
pepper - to taste ( I use lemon pepper)

Directions:
Directions:
Heat deep fat fryer or heat vegetable oil
(for heart healthy folks use Olive oil) in frying pan. Use about 3/4 inch oil in bottom of large frying pan.
Crush crackers and mix with flour and pepper in a shallow container.
Beat egg in shallow bowl. Wash zucchini and slice 1/4 inch pieces.
Dip zucchini pieces in egg then dredge in flour mixture and drop into hot oil. Fill frying pan so there is room to turn zucchini. (in deep fat fryer- drop a number of zucchini and stir with dipping utensil.)
Fry until golden brown and remove to drain on a paper towel.
Serve hot.

You can increase the egg, flour/cracker mixture and zucchini for more people.

This is one vegetable that is a favorite with everyone, even the non-vegetable eaters.

One zucchini plant will feed a family and two will feed a small country. Don't let them get very big on the vine for this treat.
