1 can salmon
2 eggs
1 can whole tomatoes (14 ounce)
1/4 cup diced green bell pepper
1/4 cup diced onion
1 to 2 sleeves of saltine crackers

Directions:
Directions:
Empty salmon in a bowl-remove bones and skin. Put half of tomatoes in with juice, reserving the other half of the can. Break tomatoes up. Add 2 eggs, green peppers and onions. Crush 1 sleeve and about 1/2 of the second sleeve of crackers and add to the salmon mixture. The mixture should be consistent with that of a meatloaf. Let sit for 15 to 30 minutes and the crackers will absorb any extra juice. Add salt and pepper to taste. Make up into patties and fry in a skillet for about 15 minutes on each side until golden.
