1 ˝ # Italian salsiccia
1 large onion
1 green, 1 red, 1 yellow bell pepper coarsely chopped
4 cloves garlic finely chopped
1 tbsp evoo
2 cups canned Italian tomatoes, drained and coarsely chopped
1 cup tomato puree’
3 cups chicken broth
1 tsp oregano
1 tsp basil
1 tsp thyme
2 bay leaves
˝ cup parsley
1 tbsp sugar
1/1/2 cup farfalle
Parmesan cheese

Directions:
Directions:
Sauté the salsiccia in 1 tbsp EVOO then drain and cut into 1 in pieces
Sauté the onion, bell peppers and garlic in the remaining EVOO until they’re just barely tender, add the tomatoes, puree and cooked sausage
Cook for 15 min.
Add the broth, oregano, basil, thyme, bay leaves parsley and sugar.
Simmer for 40 minutes. Discard the bay leaves
Add the pasta and cook until just done.
Top with grated cheese
