3 egg yolks
1 pinch salt
1/2 c. sugar
1 can crushed pineapple (9 0z), drain juice (reserve)
2 Tbsp. lemon juice
3 egg whites
2 Tbsp. sugar
2 c. Vanilla Wafers
1 cup whipped cream

Directions:
Directions:
Beat egg yolks, salt and sugar. Add pineapple juice and lemon juice. Cook stirring constantly. Cook until it coats spoon. Add pineapple and cook until thickened. Set aside to cool. Beat egg whites until STIFF. Whip cream and fold in 2 Tbsp. sugar into whipped cream. Very carefully fold whipped cream and egg whites together and then add cooled pineapple mixture. Crush Vanilla Wafers and press into bottom of glass cake pan. Pour pineapple mixture into pan. Put crushed wafers on top. Freeze.
