1 Tbs. olive oil
2 cloves garlic, minced
1 large onion, chopped
2 carrots, chopped
1 rib celery, chopped
1 green pepper, chopped
2/3 cup chopped parsley
2 tsp. basil
2 tsp. oregano
16-oz can tomatoes, chopped
salt and pepper to taste
16-oz can garbanzo beans
5 cups cooked rice
1/2 cup grated Parmesan cheese

Directions:

Heat oil and sauté garlic, onions, carrots, celery, parsley, and dried herbs until onion is translucent. Add tomatoes, salt and pepper, and beans. Combine rice and Parmesan cheese. Add bean mixture to rice mixture. Garnish with more fresh parsley and grated cheese.
