1c. homemade veggie broth & 4c of water
1 can veggie broth & 1 can of water
1/2 medium onion,minced
1 clove garlic,minced
1/2 c cilantro,chopped fine
1 green,yellow or red pepper, diced ( or 1 can green chili's, diced )
1 ripe tomato,chopped
1 can black,pinto,or mixed chili beans ,drained & rinsed
2c frozen corn
1/2 c brown rice
2TBL lime juice
salt & pepper to taste
optional: 2TBS Tequila
Tortilla chips

1. Simmer the onions,pepper, garlic,rice,corn and half of the cilantro in the broth & water for about 30 minutes or until the rices is tender.

2. Add the tomatoes and beans --when the tomatoes are just cooked,remove from the heat and add the rest of the cilantro,lime juice and tequila.

3.The tequila should be allowed to evaporate for 5 mins or so before serving.

4. Salt & pepper to taste ..crumble tortilla chips over the top of soup.
** you can sprinkle a little shredded cheese on top too.

I substitute taco seasoning instead of the bell peppers & use green chili's for added flavor!
