2 tbsp unsalted butter, melted

1 qt minus 1 cup coffee-chocolate chunk ice cream, slightly softened
1 cup semisweet chocolate chips
½ cup heavy cream
2 tbsp light corn syrup
1 tbsp instant espresso powder dissolved in 1 tbsp hot water
Whipped cream

Directions:

Process the cookies and butter in a food processor until finely ground. Press into bottom and up sides of a 9 in pie pan. Freeze for 15 minutes.
Spread the ice cream evenly into crust, being careful to fill up no more than ¼ inch below the top. Freeze one hour.
Chocolate cream: place chocolate chips in a bowl 15 minutes before ice cream is firm. In a saucepan, bring heavy cream and syrup to a slow boil, stirring occasionally. Remove from heat; pour over chocolate chips. Add espresso liquid. Whisk until smooth and allow to cool to barely lukewarm.
Remove pie from freezer. Pour chocolate cream over the top and spread. Freeze 2 hours or until firm. Top slices with whipped cream.
