1½ c. - flour
3 tsp. - baking powder
¼ tsp. - cayenne pepper
½ c. - corn meal
¼ tsp. - salt
2 & 1/3 c. - cheddar cheese, shredded & divided
8 - bacon strips, cooked & crumbled
1 - egg
1 c. - milk
¼ c. - butter, melted

Directions:
Directions:
Combine flour, cornmeal, baking powder, salt and cayenne. Stir in 2 c. cheese and bacon. In another bowl combine the egg, milk and butter. Stir into the dry ingredients just until combined. Fill greased muffin cups ¾ full. Sprinkle with remaining cheese. Bake at 425° for 12 to 15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers. Makes 1 dozen.
