3 (15-oz) cans black eyed peas, rinsed and drained
2 (15-oz) cans white corn, rinsed and drained
1 medium red onion, diced
2 med red or green peppers, diced
*1 jalapeno or serrano pepper, seeded and diced
1/3 cup oil
1/3 cup apple cider vinegar
4 or 5 tbsp sugar or pourable Splenda

Directions:
In a plastic storage container, combine the peas, corn, onion and peppers. Microwave the vinegar, oil and sugar, stirring every 30 seconds until sugar is dissolved. Pout the liquid over the veggies and stir. Refrigerate overnight, stirring occasionaly.
