2 T. corn or olive oil
1/2 c. sliced onion
1/2 c. coarsely chopped green pepper
1 small zucchini, diced
1 clove garlic, minced or pressed
1 16 oz. diced tomatoes
1 large jar (mild) spaghetti sauce
1 can red kidney beans, drained
1/4 to 1/2 c. chunky peanut butter (to taste)
1 tsp. dried oregano leaves (or fresh)
1/2 tsp. salt
1/2 tsp. dried pepper flakes

Directions:
Directions:
Sauté chopped fresh vegetables in oil about 10 minutes or until tender.
Stir in remaining ingredients; cover and cook at low heat for about 30 minutes, stirring occasionally, until flavors are blended.
Serve over 1 lb. cooked spaghetti.

This rather strange looking sauce is very delicious; Brian (McEwen) lived in a co-op vegetarian dorm in college and this dish was one of his dorm-mates' favorites.
