Ingredients: 1/4 c. olive oil 2 medium onions, peeled and thinly sliced 1 1/2 lb. fresh green beans, washed and trimmed 1 clove garlic 4 medium potatoes, prepared unpeeled, and cut into chunks (red skin potatoes are preferred) 3-5 ripe tomatoes, chopped, OR 1 16 oz. can diced tomatoes, drained 1/4 tsp. red pepper flakes (optional) Salt and pepper to taste (cheese provides salt) 2-3 oz. feta cheese, crumbled

Directions:Coat the garlic skin with a little olive oil and place in heated oven about 10 min. Cool and smash with flat of knife; remove skin. Sauté onions in remaining olive oil in a large saucepan until onions are soft and translucent. Add green beans and potatoes and garlic; stir to coat with oil. Cook 3-5 minutes. Add tomatoes, chili flakes, and 1/4 cup water or juice from tomatoes. Cover tightly and simmer until potatoes are soft and liquid is absorbed. (Keep adding water if it seems to need it). Cook about 40 minutes. Transfer to a serving dish and allow to cool for a few minutes. Add cheese, toss, and season to taste. |
