1 cup oatmeal
1 cup buttermilk
1/3 cup soft shortening (part butter)
1/2 cup packed brown sugar
1 egg
1 cup all-purpose flour
1 t baking powder
1/2 t soda
1 t salt

Directions:
Directions:
Soak the oatmeal and buttermilk together while you measure and mix other ingredients.
Mix together the soft shortening/butter, brown sugar and egg.
Sift together flour, baking powder, soda and salt.
Stir flour mixture into shortening mixture alternating with oats and buttermilk. (Put a little of one in at a time, and alternate with the other until it's all mixed). Fill greased muffin cups 2/3 full.
Bake at 400º for 20 minutes, or until golden brown.
