8 eggs beaten
2 c. cooked crumbled sausage or cubed fully cooked ham
2 c. cubed process American cheese (I use Velveeta)
2 c. milk
1 c. crushed saltines (about 24 crackers)
¼ c. chopped onion
¼ c. chopped green pepper
¼ c. chopped sweet red pepper
½ tsp. salt

Directions:
Directions:
Combine all ingredients in a large bowl; pour into a greased, shallow 13x9x2” baking dish. Bake, uncovered at 350º for 45 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before serving. Yield 8-10 servings. This can be made the day before, covered, and refrigerated overnight. Bake the next morning. We take to tailgates. Freeze leftovers in squares in a freezer bag then thaw and microwave for breakfast when having overnight guests.
