Ingredients: 2 pounds ground beef 2 cups crushed Ritz Crackers 2 beaten eggs 1 medium chopped onion 1 can nibblets corn 1 jar Green Giant sliced mushrooms drained 2 cups shredded cheddar cheese 2 cups barbeque sauce 1 clove crushed garlic 1 tablespoon Morton's Nature's Seasoning Salt and Pepper to Taste.
Option: 4 cups cheddar mashed potatoes

Directions: |
Directions:1) Mix all ingredients together except for cheese, corn, mushrooms and barbeque sauce. This gets messy!! use your hands! 2) Add 1/2 cup of barbeque sauce to the meatlof mixture. Separate it into two parts. 3) In a 2 quart cassarole place 1/2 of the meat mixture forming it into a bowl. 4) Place the drained corn, then the drained mushrooms and then the cheddar cheese in the hollowed out area. 5) Cover it with the remaining meatloaf mixture pressing the sides together to make a good seal. Pour the remaining barbeque sauce over the meatloaf. 6) Bake in a 350ºF oven for 1 1/2 hours.
Option: After the meatloaf has cooked for 1 1/2 hours, remove it from the oven and frost it with the cheddar mashed potatoes. This makes a great one dish meal. Pop it back in the oven for 15 minutes then let sit for 10 minutes and serve |
