1/3 c. olive oil
3 lbs.zucchni, roll-cut into 1 in.thick chunks
2 t. grated orange rind
1 lb.can garbanzo beans, drained
1 T. red wine vinegar
1 lg.sweet red pepper, cut into 1 in.wide strips
2 T. pine nuts
2 T. finely chopped shallot
1/4 t. salt
1/4 t. ground black pepper

1. In large skillet, heat olive oil. Add zucchini and orange rind: cover and cook, stirring occasionally until zucchini is just slightly cooked (4 - 5 minutes)
2. Spoon zucchine mixture into large bowl and stir in garbanzo beans, vinegar, red pepper, pine nuts, shallot, salt, and black pepper. Cover and refrigerate until ready to serve.
