SALAD:
1 qt. spinach, washed and seperated
1/2 c. chopped celery
1 T. chopped onion
3/4 c. sharp cheddar, juliene or chopped
3 hard boiled eggs, chopped
DRESSING:
1/2 tsp. salt
1 1/2 T. horseradish
1/2 tsp. tobasco
1 1/2 tsp. vinegar
1 c. mayo

Directions:
Directions:
Toss together the first 5 ingredients in a large bowl.
Combine the dressing ingredients together then fold into the spinich mixture. Let stand at room temperature for several hours before serving. This is a limp salad and delicious!

This salad was served every New Years Eve at Hathaway's restaurant in Harpswell Center before it closed several years ago. I could never get enough of it!!!
