2 lbs of beef liver / sliced
1 cup all purpose flour
1/2 teaspoon salt
3/8 teaspoon pepper
1 1/2 cup onions sliced
3 tablespoons bacon fat (drippings)
2/3 cup water
some broth

Directions:
Directions:
Dredge liver in mixture of flour, pepper and salt

Saute in fat. Place in deep baking dish. Cover with onions that have been sauteed in bacon fat. Add hot water. Cover well and bake at 300ºF for 1 hour or until tender.
