Ingredients:  
1 - whole chicken (about 3 lbs.)
3 slices - bacon, chopped
1 lb. - beef bones
water to cover
12 - leeks, chopped, reserve 2
1 large - onion
sprig - fresh thyme
1 - bay leaf
salt & pepper to taste
1 c. - pre-soaked prunes (optional but traditional)
2 T. - parsley, finely chopped

Directions:
Directions:

Place chicken, beef bones, bacon, leeks, onion and herbs in large pot. Add water and simmer for 2 to 3 hours until chicken is tender, removing scum as required. Remove beef bones and chicken, strain the stock. Chop chicken into bite size pieces. Add chicken pieces back into the stock along with the prunes and remaining 2 chopped leeks. Simmer gently for 15 minutes.
