2 cups flour
1 1/4 cup sugar
2 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2 cups grated carrots
1/2 cup raisins
1/2 cup chopped pecans
1/2 cup grated coconut
1 apple, peeled and grated
3 eggs
1 cup vegetable
2 tsp vanilla extract

Combine the flour, sugar, soda, salt and cinnamon in a large bowl. Stir in carrots, raisins, pecans, coconut and grated apple. In a small bowl beat eggs. Add oil and vanilla. Stir in flour mixture. Spoon into paper lined muffin pans, filling to the top. Bake at 350 degrees for 30 minutes or until "springy" to the touch. Serve warm. May be reheated in a microwave oven. Makes 15 to 18 large muffins.
