2-28 oz cans petite diced tomatoes
1-medium onion; red, yellow, or white - finely diced
1-bell pepper- finely chopped
1 bunch of cilantro - minced
11/2 limes (for juice)
3 scallions - sliced
1 to 3 jalopenoes (to your taste) seeded and finely diced
Kosher salt and fresh cracked black pepper to taste.

In a large mixing bowl add tomatoes. If you have a food processor it would be great to pulse them a few times. After the tomatoes add all of the other ingredients. Mix well-check for seasonings.You may want to add more spices for your taste.
