1 lb ground meat
1 onion
1/2 cup cornmeal for mixture, some extra for rolling them in
2 T chili powder
2 tsp. cumin powder
2 cans tomato sauce
salt & pepper to taste
1-2 pods garlic
Corn shucks, foil, or coffee filters

Directions:
Directions:
The night before you make tamales, wash & soak shucks.
Foil or coffee filters they work well also. Place tomato sauce,
onions, and garlic in a blender and puree. Combine all
ingredients in a large bowl and mix well. Form 2 heaping
tbsp.and roll in corn meal. Place in a wrapper & roll closed.
Place wrapped tamales in a dutch oven or large pot with
steamer rack on bottom and a little water for steaming.
Continue stacking on top of each other until all mixture is
wrapped. Cover with extra sauce & water to steam over low
fire. Steam 1 1/2 hrs-1hr.& 45 min.

Very good. You have to use a good amount of salt and
