"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
Ingredients:
2 garlic cloves, crushed
2 eggs
1 cup grated Parmigiano cheese
1/4 pound pancetta, cubed (can use country bacon)
Olive oil
Salt
Pepper
1 lb. spaghetti

Directions:
Directions:
Put large pot of water on to boil.

Cook panchetta over low heat until crisp. (Don't cook to fast.)

In one bowl mix eggs with cheese; add enough cheese to
make a thick paste.

When bacon is about done, still with some fat, add crushed
garlic and splash of olive oil.

Add pasta to boiling water. Follow directions on box (usually
cook one minute less).

Drain pasta and put in bowl.

Toss in bacon and hot grease. Use two forks to mix together,
lifting the noodles so the grease covers them.

Toss in the egg and cheese mixture. Again use the forks so
the mixture cooks as it drips down the noodles.

Add salt and pepper to taste.
