2 T buter
1 small onion, chopped
2 cloves garlic, minced or pressed
8 oz Camembert cheese, diced
1 egg
1/2 c ricotta cheese
1 c. chopped parsley
1/2 c shredded Parmesan cheese
25-30 large dry pasta shells

1 jar (15oz) meatless spaghetti sauce or 2 cups homemade spaghetti sauce.

In frying pan melt butter. Add onion and garlic and cook, stirring until onion is limp. Reduce heat to low add Camembert cheese and stir until soft; remove from heat. Mix the egg, ricotta, parsley and 1/2 of the parmesan cheese; stir into Camembert mixture.
Cook shells in boiling water until tender about 9 minutes. Drain and rinse with cold water, drain again. Stuff each shell with about 1 T filling.
Spread half of the spagetti sauce in greased baking dish. Arrange shells, filling side up in sauce. Spoon the remaining sauce over the top of each. Bake covered in a 350º oven until hot and bubbly, about 30 minutes. Garnish shells with remaining parmesan cheese.
