1-1/2 cups Sugar
1 cup Oil (vegetable or light olive oil)
1-1/2 tsp Vanilla Extract
1 Large Lemon
3 cups Flour
1 tsp Salt
1 tsp Baking Soda
1 tsp Baking Powder
2 cups Zucchini (shredded)

Glaze:
1 cup Powdered Sugar
1 Tbsp Milk
2-3 Tbsp Lemon Juice

Directions:

Prepare two 8" x 4" loaf pans by greasing or spraying with PAM.

Preheat oven to 350ºF

Wash then lemon then zest it into a small bowl. Cut the lemon and extract the juice into another small bowl. Set aside for later use.

Wet Ingredients: In a large bowl combine sugar and lemon zest, stir well. Add eggs, oil, vanilla extract, and 1 Tbsp of reserved lemon juice. Stir until well blended.

Dry Ingredients: In a small bowl whisk together flour, salt, baking powder, and baking soda. Mix well. Add this mixture into the wet ingredients until combined. Fold in the zucchini and blend well.

Pour into prepared pans and bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Allow to rest in the pan for 10 minutes before removing the loaf onto a wire cooling rack to cool completely. While the bread is cooling, make the glaze.

Lemon Glaze:
In a small bowl, combine powdered sugar, milk, and 2-4 Tbsp lemon juice (to preferred taste). Drizzle over cooled loaves.

Zucchini: If the shredded zucchini seems extra wet, gather it in paper towels and squeeze it out over the sink.

Freezing Instructions: Allow to cool completely, wrap in plastic wrap and store in a freezer safe container for 2-3 months. Thaw on countertop (or for a few seconds on defrost in the microwave).
