1 cup barley flour
1 cup all-purpose flour
¾ cups warm water
2 Tbls extra virgin olive oil
½ tsp salt

MIX: In mixing bowl, stir together flours and salt. Add olive oil and warm water.
KNEAD: Mix with your hands until dough forms. Knead on clean surface for 5 minutes until smooth. A wonderful task for children!
DIVIDE: Cut into 4 equal pieces. Roll into thin, flat circles, about ¼ inch thick.
COOK: Heat a dry cast-iron skillet or heavy frying pan over medium high heat. Cook each flatbread 2 to 3 minutes until bubbles form and brown spots appear. Flip and cook 2 more minutes.
