4-5 small russet potatoes
2 tbsp. olive oil
1 tbsp. salt
1 tbsp. pepper
1 tsp. garlic powder
1 tsp. paprika

2 lbs. boneless skinless chicken breasts
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. paprika
1 tsp. italian seasoning
1 tsp. onion powder
2 tbsp. butter
1 bottle Buffalo Wild Wing Garlic Parmesan sauce

Dice the potatoes and mix well with the oil and seasonings. Place in air fryer at 400º for 20 to 25 mins. If a smaller air fryer is being used it may take longer especially if you like crispy potatoes, but they will soften a bit when mixed with the chicken.

Cube the chicken and mix with the seasonings. In an oven safe skillet, heat butter and cook chicken until no longer pink. Add the garlic parmesan sauce and stir. Pull the potatoes from the air fryer and stir into the chicken mix. Top with mozzarella cheese. Put in a 350º oven to melt the cheese.

If you are a garlic lover, you can add more garlic to the chicken seasonings! This also tastes good with crumbled bacon added in. Great with a side salad. A family favorite!
