▢ 1⅓ lb (750g) boneless skinless chicken thighs
▢ 2 tbsp olive oil
▢ 2 tbsp lemon juice
▢ 2 tsp garlic powder
▢ 2 tsp paprika
▢ 2 tsp salt
▢ 1 tsp pepper
2 teaspoons dried parsley
4 Tablespoons mayo

▢ ½ cup butter melted
▢ 6 garlic cloves minced
▢ 6 tbsp grated parmesan cheese
▢ 4 Tablespoons fresh lemon juice
▢ 1 tbsp chopped parsley
▢ 1 tsp salt

▢ ½ tsp pepper

The Garlic Parmesan butter can be omitted

Slice the chicken into bite-size pieces and place in a large bowl.
Stir together the oil, lemon juice and seasonings then pour over the chicken.

Stir to combine and allow to marinade for at least 2-4 hours.
(You can also marinate the chicken in a ziploc bag.)
Soak wooden skewers in hot water while the skewers are marinating (metal skewers also work well).
Thread the marinated chicken pieces onto the skewers.
Combine melted butter, minced garlic, finely grated parmesan cheese, parsley, salt and pepper in a small bowl.
Add a squeeze of lemon juice, taste and adjust the seasoning if necessary.
Cook the chicken in a preheated grill pan or on an outdoor grill over medium-high heat for 12-15 minutes, turning regularly, until the chicken is golden brown on all sides and cooked through.
Brush the parmesan butter sauce over the chicken for the last 2 minutes of cooking to prevent the garlic from burning.
Remove from the grill, allow to rest for 2 minutes then serve.
